At Finca Bethania in northern Nicaragua, Ana and Martha Albir combine generations of coffee growing with a strong focus on sustainability and careful processing. This Java lot undergoes dry anaerobic fermentation, bringing together the tart sweetness of dried cranberries, soft nougat and the delicate character of white tea. A distinctive yet balanced coffee roasted for filter.

Dose
Use 15 g of coffee.
Temperature
Heat the brewing water to 93°C.
Bloom
Pour 50 g of water and allow the coffee to bloom for 35 seconds.
Complete
Complete the brew with additional pours of 75 g and 100 g, reaching 225 g total water and aiming for a total brew time of 2:30–3:00 minutes.
