Meet Father’s

Father’s Coffee Roastery was founded in Ostrava in 2018 by Petr and Marie. Their interest in specialty coffee began in 2013 with a Kenyan espresso that was clean, sweet and fruity, and changed how they thought about coffee. A few months later they started COKAFE in Ostrava, first as a mobile café on a bike and then in a shop shared with a local clothing brand.

To gain experience abroad, they sold the café and moved to Berlin to work as baristas at Five Elephant, where the idea for their own roastery took shape. In spring 2018 they opened it in Ostrava-Stará Bělá as a family business. Today Father’s has a team of around fourteen people, a store in Prague’s Bubeneč district, and customers across Europe.

Their Approach to Coffee

Father’s buys only fresh-crop coffee and looks for two things in each lot: exceptional flavour and the story behind each bean. It aims for long-term relationships with producers, and since 2023 this has included projects at origin. In eastern Uganda, together with The Coffee Gardens and with support from the Czech Development Agency, Father’s funded a colour-sorting station and a quality-control lab. In Colombia, working with the non-profit Apunu and the exporter Siruma, it supports quality-control equipment and solar dryers.

In the roastery, Father’s uses a Loring S35 hot-air roaster, suited to lighter roast profiles. Every batch then passes through an optical sorter to remove underdeveloped beans, and each roast is tracked with eight data points and several quality checks.

What to Expect in the Cup

Father’s aims for coffees with fruit and gentle acidity, supported by a rich, sweet body. The roasts are light without being thin, and the style is generally inviting rather than challenging. The range changes with the harvests, and Father’s roasts separately for espresso and filter.

Why Father’s Is at TERROIR

We chose Father’s for its combination of precision and responsibility. The careful roasting and quality control are only part of it; the roastery’s projects in Uganda and Colombia show a commitment that reaches back to the farms themselves. Father’s is also a family business that has kept its personal character as it has grown. Within our collection, it represents Central Europe’s specialty coffee scene.

A Closer Look: Investing at Origin

Many roasters speak about long-term relationships with producers. Father’s has also invested in the infrastructure behind them. In eastern Uganda, the colour-sorting station and quality-control lab it helped fund with The Coffee Gardens have, according to the roastery, reached hundreds of farmers and helped them earn higher prices for better coffee. In Colombia, the work with Apunu focuses on solar dryers and quality-control technology, which improve both processing and sustainability.
