Our roasters
An Amsterdam roastery that treats flavour as a field for exploration, balancing analytical precision with playful, memorable coffees.

The roastery
DAK Coffee Roasters was founded in Amsterdam in 2019 by Louis-Philippe Boucher and Veronique Lagarde, both originally from Montreal. Before coffee, they worked in finance and marketing, and they spent several years living in different European cities before settling in Amsterdam. The name comes from the place where the idea took shape: dak is the Dutch word for roof, and it was on the roof of his home, over a cup of coffee, that Louis-Philippe decided to start a roastery.
What began as a small side project has grown into a team with its own roastery in Amsterdam-Noord and a showroom in Oud-West, where the coffees can be tasted and bought. DAK’s coffees are now served and sold well beyond the Netherlands. From the start, the founders have wanted specialty coffee to feel open and enjoyable rather than exclusive.

01
DAK roasts light. Its stated aim is a cup that is clean, bright and sweet, and it treats the roast profile as something to keep refining rather than a fixed formula.
The range is deliberately broad. Alongside coffees from classic origins and traditional processing, DAK offers lots produced with newer fermentation methods and less common varieties. Green coffee is bought through importers whose values the founders share.
DAK also names its coffees differently from most roasters. Instead of leading with country and farm, many coffees carry names that point to the experience in the cup, such as Milky Cake. The origin details are still there; the name is simply the first hint.
02
Clarity is the common thread. Even the more expressive coffees are roasted to stay clean and sweet, and the light roast lets acidity and aromatics lead. Beyond that, the range is too wide to sum up in one style: some lots are bold and fermentation-driven, others are restrained washed coffees in which variety and origin come through quietly. DAK roasts for both filter and espresso.
03
We chose DAK for its range. DAK places experimental, fermentation-driven lots and clean, classic coffees side by side, and treats both with the same care. That gives TERROIR customers two ways into one roaster: a coffee that surprises, and a coffee that simply tastes very good. Within our collection, DAK is where we point people who want to explore what else coffee can be.
04
Most coffee bags lead with country, region and process. DAK leads with a name that suggests how the coffee might taste, and adds the origin details underneath. It is a simple idea with a practical purpose: it makes specialty coffee easier to approach for people who do not yet read processing methods and variety names. The playful presentation sits on top of careful work. Behind each name is a selected lot, a light roast and the same goal of a clean, sweet cup.
