Meet Kaffeeschmiede

Kaffeeschmiede is a private roastery and café in Düsseldorf-Oberkassel, run by its owner and roastmaster, Tamas Fejer. The café is open every day of the year and serves coffee from its own roastery alongside waffles, homemade cake and breakfast. Coffee beans are filled fresh at the counter, ground on request and individually labelled.

Tamas holds the title Deutscher Röstmeister (2009) and the Chef-Diplom Kaffeesommelier, and is a member of the Deutsche Röstergilde. Kaffeeschmiede is also a family business: Tamas’s nephew Joschka works alongside him, including at the coffee seminars where guests learn about coffee from roasting to cup.

Their Approach to Coffee

Kaffeeschmiede follows a different roasting philosophy from much of today’s specialty coffee scene, and says so openly. Tamas roasts in small batches on a traditional Probat drum roaster, slowly and gently, in an old industrial hall in Düsseldorf-Heerdt. The aim is balance: full-bodied, smooth coffees with low acidity that bring out the natural aromas of the bean. Very light, high-acid roasts are not the roastery’s style.

Green coffee comes from carefully selected farms around the world and reaches Düsseldorf through Hamburg’s Speicherstadt. Between Kaffeeschmiede and the farmers there is only the importer, who handles the long sea journey. Part of the range is certified organic.

What to Expect in the Cup

Kaffeeschmiede’s coffees emphasise body, smoothness and sweetness, with acidity kept in the background. The style is familiar and comforting rather than surprising. The range includes coffees for filter, espresso and cappuccino, each roasted toward the same idea of balance, and offers a different way into carefully sourced, freshly roasted coffee for people who find very light roasts too sharp.

Why Kaffeeschmiede Is at TERROIR

We chose Kaffeeschmiede because a collection made only of light roasts would show just one side of specialty coffee. Kaffeeschmiede represents another side: a clear roasting philosophy, held with conviction and carried out with care. It is also a local connection. Like TERROIR, Kaffeeschmiede is based in Düsseldorf, and it was one of the first roasters to join our collection.

A Closer Look: A Different School of Roasting

Over the past fifteen years, much of specialty coffee has moved toward lighter roasts. Kaffeeschmiede has stayed with the drum roaster and the slower roast. A longer, gentler roast develops body and softens acidity, producing coffees that feel round and forgiving. At TERROIR, we see this as a reminder that specialty coffee is defined by quality and care, not by a single roast style.
